Blueberry Pudding Cake
Preheat oven to 350 degrees.
2 cups blueberries 1/2 cup milk
1 cup flour 3 tablespoons melted butter
1 tsp. baking powder 1 tsp. cinnamon
3/4 cup sugar 1 tsp. lemon juice
3/4 cup sugar
1 tablespoon cornstarch
1 cup boiling water
Toss berries with cinnamon and lemon juice. Place in greased 8-inch square baking dish. In mixing bowl, combine flour, sugar and baking powder. Stir in the milk and butter. Pour batter over fruit. To prepare topping, combine sugar and cornstarch very well. Sprinkle over batter, then, slowly pour boiling water over all. Bake 45 to 50 minutes in preheated oven. Cake rises to the top and makes a berry pudding on the bottom.
