Fresh Blueberry Glazed Pie
9-inch deep-dish pie shell or graham cracker pie shell
4 cups fresh blueberries
1 cup sugar more or less
2 1/2 tablespoons cornstarch
2 1/2 tablespoons lemon juice
1 cup water
Prepare pie shell
Bake pie shell
according to package directions.
Graham cracker shells do not need to be baked if store bought.
This recipe uses store bought shells, but you can certainly make
your own by going to our 'Peach Pie' recipe on the Recipes page for
Combine water with cornstarch and sugar. Add 1/2 cup mashed soft blueberries. Cook in a small saucepan until thick, stirring constantly. Lower heat and simmer about 5 minutes. When clear, add 2 tablespoons lemon juice to prevent discoloration. Stir; cool.
Arrange attractively in prepared pie shell. Cover with cooled glaze. Refrigerate. Serve with whipped topping.
